We still have leeks at the farmstand! If you are looking for a great recipe incorporating leeks, try our version of Green Rice! We whipped up a batch of this fragrant, flavorful rice for lunch and it tastes great. It's the type of dish that also makes great leftovers, as the flavors become stronger the longer they meld together.
Trim end, halve, wash, and finely chop 2 leeks.
Wash and mince three handfuls cilantro leaves.
Wash, stem, seed, and dice 1 sweet pepper.
Wash 1 1/2 cups rice.
In a large skillet with a lid over high heat, warm 1 TB olive oil. When the oil ripples add the leeks. Sauté 7-8 minutes to soften leeks and begin browning. Stir in rice and 3 cups water, broth, or stock (white rice) or 5 cups water, broth, or stock (brown rice), 1/2 tsp. salt, 1 tsp. ground chili powder. Bring to a boil, then reduce heat and simmer, covered, 20-25 minutes (white rice) to 45-50 minutes (brown rice).
Check rice regularly to prevent burning, but only stir twice in cooking. Once rice is tender, remove skillet from heat, stir in cilantro and sweet pepper, and allow to sit, covered, 5 minutes. Adjust seasonings to taste.
