Bread pudding is great use for stale bread. You can store your stale bread in the freezer until you have a loaf’s worth.
Preheat oven to 350 deg. F. Great large casserole dish.
Tear or cut 1 loaf of stale dry bread into pieces (about 8 cups).
Wash, core and dice (chop into small pieces) 2 apples.
Make custard batter: Purée together 2 cups nondairy or dairy milk, 8 oz. silken tofu or 2 large eggs, 1/2 cup maple syrup or honey, 1/3 cup brown sugar, 1 TB vanilla extract, 2 tsp. ground cinnamon, and 1/4 tsp. salt.
Toss the torn bread and diced apples together in prepared casserole. Pour custard batter over dry ingredients. Allow pudding to sit 10 minutes.
Bake 45 minutes, or until bubbly and browning. Allow pudding to sit 15 minutes before serving.
Eat plain for dessert, snack, or breakfast, or top with heavy cream or whipping cream for an extra-rich dessert. Enjoy!
