Buckles are fresh fruit filled coffee cakes, one of the Classic American fruit desserts. This one incorporates apples and maple syrup instead of the more familiar blueberries.
Preheat oven to 375 deg. F. Grease 2.5 qt. casserole. In a small mixing bowl, make streusel by mixing together: 1 cup flour, 3/4 cup chopped pecans or walnuts, 1/3 cup brown sugar, 1/3 cup safflower oil or melted butter, 1 1/4 tsp. ground cinnamon, 1/2 tsp. ground nutmeg, and 1/4 tsp. salt. In a medium-large bowl, whisk together these dry ingredients: 1 1/2 cup flour, 1/4 cup granulated sugar, 1 tsp. ground cinnamon, 1 tsp. baking soda, 1 tsp. baking powder, and 1/4 tsp. ground cardamom (opt.) Wash, core, and coarsely chop 2 apples. To dry ingredients in medium-large bowl, add 3/4 cup nondairy or dairy milk, 1/3 cup applesauce, 1/4 cup maple syrup, 1 TB apple cider vinegar, and 1 tsp. vanilla extract. Mix gently to incorporate wet and dry ingredients. Fold chopped apple into batter. Scrape batter into greased casserole dish. Spread streusel over top of batter. Bake 40-60 minutes, until a cake tester or toothpick can be removed cleanly after inserting into center. Allow buckle to cool 15 minutes before serving.
