Combine apple pieces with cooked applesauce, 1 cup maple syrup or honey, and 1 cup brown sugar, 2 cups apple cider, 1 1/2 tsp. ground cinnamon, 1/2 tsp. ground nutmeg, 1/4 tsp. ground ginger.
Continue cooking on low 8-10 more hours, until spreadable.
Adjust seasonings to taste.
