Wash, peel if desired, core, and thinly slice 4-6 apples.
In a frying pan over medium heat warm 1 TB sunflower or safflower oil or melt 1 TB butter. When oil ripples or butter is melted, tilt pan to coat and add apples. Sauté apples 4-5 minutes, until beginning to soften. Add 1/4 tsp. ground allspice, a pinch of salt, and 1/2 cup apple cider. Cook another 5 minutes until apples are very soft. Adjust seasonings to taste
