Make this delicious and wholesome Maine Morning Apple Flax Porridge for an extra special breakfast on a cold Maine morning!
Serves 2, 10-20 min
1 cup quick or traditional rolled oats
1 T flaxmeal (try golden flaxmeal if available)
1 T chia seed or other favorite seeds/nuts (optional)
1 peeled and cored chopped apple
¼ cup maple syrup (optional sweetener)
3 cups water *Substitute water with Almond Milk, Rice Milk, or Dairy Milk to increase creaminess
½ tsp salt
Optional Sunrise Toppings
¼ cup chopped apricots
¼ cup golden raisins
¼ cup dried cranberries
2 pieces of candied ginger, chopped
Add oats, flaxmeal, chopped apple, chia seed, maple syrup (if using) and salt to water or milk in saucepan and bring to a light boil (keep under boiling if using milk). Reduce heat to low and simmer with lid for 10 min if using quick cooking oats, stir as needed. If using traditional rolled oats, simmer with lid on low for approximately 20 minutes, or to desired consistency. Stir as needed. Add more water or milk as needed to prevent oatmeal from sticking to bottom of pan. Top two large bowls with a colorful sprinkling of the optional toppings.
Serve with milk and honey or maple syrup if desired.
