If you've noticed the Jerusalem Artichokes in Pietree's Farm Stand or maybe our Farmers' Market table and have hesitated to buy them, not knowing how to prepare them - here is an easy suggestion. Everything tastes better roasted with salt, garlic, and seasoning - and jerusalem artichokes are no exception. We have plenty of both the artichokes (also known as Sunchokes) and garlic (red and white varieties) available at the Norway Farmers' Market - so swing by on a Saturday (10-2 at the CEBE Building, downtown Norway) and pick some up for your next winter night warm up meal.
Preheat oven to 350 degrees. Scrub 1 pound Jerusalem Artichokes and cut out any eyes. Cut into one inch pieces. Mix 3/4 cup Olive Oil, 2 tablespoons dried thyme, 2-4 cloves of minced garlic (depending how garlic-y you like things. We used Pietree's own red garlic), and sea salt to taste. Add Jerusalem Artichoke pieces and toss to coat. Spread the mixture in a flat layer on a baking sheet. Roast in the preheated oven until the Jerusalem artichokes are tender, 35-45 minutes.
