Baked apples are one of our favorite winter treats. They are simple to prepare, easy to dress up, and delicious for breakfast, brunch, and dessert!
What? You have no more apples left from this autumn? We are at the Norway Winter Farmers’ Market Saturdays10am-2pm at 479 Main Street (First Universalist Church) with delicious apples we have been storing for you!
Preheat oven to 350 deg. F.
Wash and core 4-6 apples.
Put cored apples into an 8×8 baking dish (we like non-reactive ceramic or glass, in case we choose an acidic filling).
Mix together desired filling (options below).
Stuff the apples.
Dress the apples with 1/4 cup maple syrup and 1/2 cup juice (apple or orange).
Bake 30-45 minutes, until flesh is soft and skins begin to split.
Serve plain, with cream (dairy or non-dairy), whipped cream or ice cream.
Filling options (based on 4-6 apples)
Dried fruit. Blend 1 cup dried fruit – apples, cherries, raisins, or cranberries are excellent for this – with 1/2 tsp. ground cinnamon or nutmeg. This filling works with both apple and orange juice.
Traditional. Blend 3/4 cup raisins or date pieces with 1/4 cup chopped walnuts or pecans, 1/2 tsp. ground cinnamon and 1/8 tsp. ground allspice. This filling works with both apple and orange juice.
Gingernut. Blend 3/4 cup chopped walnuts or pecans with 2 TB crystallized ginger pieces, 1/4 cup raisins, 1/2 tsp. ground cinnamon and 1/4 tsp. cloves. This filling works best with apple juice.
