Preheat oven to 375 deg. F. Line a baking sheet with parchment paper, or grease the baking sheet.
Wash and peel 6 large carrots. Slice into carrot coins of medium thickness.Toss carrot pieces with 2 tsp. olive oil(garlic or rosemary-infused oil is exceptionally lovely with this dish). Spread the carrot slices out in a single layer on the baking sheet or parchment. Sprinkle salt over the carrots.
Roast 20-30 minutes, until fork tender. Enjoy!
