You might call this two-apple bread, or Two World Apple Bread, as this takes the tuber known as Peruvian Ground Apple (yacon) and tree apples, which originate from Asia Minor. The yacon will turn dark green once baked in the bread.
Preheat oven to 350 deg. F.
Grease 1 large loaf pan or set out two small loaf papers.
In a medium bowl, stir together 1 ½ cups whole wheat flour, ½ cup sugar, 3 TB ground flaxseed, 1 tsp. baking soda, ¾ tsp. ground cinnamon, ½ tsp. baking powder, ½ tsp. salt, and ¼ tsp. allspice.
Grate 1 small apple (about 2/3 cup). Peel and grate 1/3 medium-large yacon. Quickly toss the grated fruit and tuber with the dry ingredients (yacon is a rapid oxidizer!) Add 2/3 cup chopped walnuts or pecans.
Add 1/3 cup maple syrup and 1/3 cup safflower oil and stir to make a dry batter.
Scrape into loaf pan or divide between small loaf papers.
Bake about 45 minutes, until browned and resists touch. Allow to cool 10 minutes before slicing. Enjoy!
