These homely, modest muffins are packed with apple flavor and tummy happiness on an autumn or winter morning. They are a great way to use homemade applesauce and winter apples.
Preheat oven to 400 deg. F. Grease 12-cup muffin tin. In a blender, whip together 4 TB ground flaxseed meal and 1/2 cup water until gooey. In a large bowl, whisk together 2+1/2 cups wheat bran, 1+1/2 cups barley or whole wheat flour, 1/2 cup brown sugar, 1/4 cup sugar, 2 tsp. baking soda, 1 tsp. ground cinnamon, 1/2 tsp. ground nutmeg, and 1/2 tsp. salt. Core and chop 1 apple. Toss with bran-flour mixture. Add 1/4 cup safflower oil, 2/3 cup applesauce, 1 cup dairy or nondairy milk, and 1/2 cup dried cranberries or raisins. Stir until all ingredients just incorporated. Divide batter evenly between muffin tins. Bake 15 minutes, or until a cake tester inserted in the center comes out clean. Let cool 5 minutes in tins then remove to wire rack to finish cooling. Enjoy!
