Orange Yacon Bread

Yacon is one of the unique produce items we have in our farm stand and bring to our farmers' market tables.  People are intrigued by this exotic-seeming fruit-like root vegetable and conversations are lively figuring out ways to prepare it.

We have found a delicious recipe for Orange Yacon Bread definitely worth checking out!


In South America, the home of the sweet Peruvian Ground Apple, cooks commonly combine yacon with citrus. This is, in part, because yacon oxidizes quickly, turning an unappetizing black in minutes, without the protection of citrus. The acidity of citrus is a friendly dance partner for the mildly sweet tuber.

Preheat oven to 350 deg. F.
Grease 1 large loaf pan or set out two small loaf papers.

Stir together 1+1/2 c. whole wheat flour, 1/2 cup sugar, 1/4 cup cornmeal, 3 TB ground flaxseed, 1 TB dried orange zest, 1 tsp. baking soda, 3/4 tsp. baking powder, and 1/2 tsp. salt.

Peel and grate 2/3 medium size yacon and toss with 1 TB orange juice or lemon juice. Toss this mixture and 2/3 cup chopped walnuts or pecans with the dry mixture.

Add 1/3 cup maple syrup, 1/3 cup vegetable oil, 2 tsp. orange oil, and 1 tsp. vanilla extract and stir to make a wet batter.


Scrape batter into large loaf pan or divide between the loaf papers.

Bake 45 minutes, or until golden and firm to touch. Allow to cool 10 minutes before slicing. Enjoy!
