Making an apple pie can be broken into three phases: preparing the crust, making the filling, and finishing the pie. Each of these variatations ends the same way, playing with filling, and, in one, crust. All these apple pies can be turned into hand pies, by dividing each crust into 6 parts, rolling out the circles, filling ½, folding the pastry over, crimping, and baking 20-25 minutes.
Prepare your favorite double pie crust recipe with 3/4 tsp. ground cinnamon incorporated in the crust. Preheat oven to 375 deg. F.
Wash, peel (optional), and core 6-8 medium baking apples. We like to use a mix of sweet and tart, soft and firm bakers. Quarter the apples and slice thinly. Toss with 1/4 cup apple cider, 2 TB flour (wheat or rice), 1/2 tsp. ground cinnamon, a pinch of nutmeg, a dash of ground cloves, and a dash of salt.
Roll out the bottom crust and line the pie plate. Pack the apple mixture well into the pan. Roll out top crust and cover pie. Crimp edges closed. Cut 3-5 vents in top of pie. Brush with 1 TB melted dairy or non-dairy butter. Sprinkle with 1 TB coarse sugar. Bake 50-60 minutes, until pie is bubbly and crust has browned. Enjoy!
Prepare pie as above, reducing the number of apples by 1. Wash and coarsely chop 1 cup fresh cranberries. Toss with 1/3 cup granulated sugar. Proceed with apple cider and spicing step as above through final baking. Enjoy!
Prepare pie as above, reducing the number of apples by 1. Plump 1 cup of raisins in 1/2 cup apple cider by bringing that mixture to a boil, with 1/2 tsp. ground cinnamon, a pinch of nutmeg, a dash of ground cloves, and a dash of salt. Mix in 2 TB flour (wheat or rice) and apples once raisins are plumped. Proceed as in classic pie through end. Enjoy!
Prepare your favorite double crust recipe, reducing the shortening by 2 TB and incorporating 1/2 cup crumbled cheddar and 1/2 tsp. ground nutmeg into the crust. Preheat oven to 365 deg. F.

Toss with 1/2 cup crumbled cheddar, 1/2 tsp. ground cinnamon, a pinch of dried orange zest, a dash of ground cardamom, and 1/3 cup granulated sugar. Follow instructions for finishing pie as in classic apple. Enjoy!
