Roast potatoes are one of our favorite autumn and winter comfort foods! Crispy on the outside and soft on the inside, warmly spiced, roast potatoes are a terrific side dish that feels festive but it so easy!
Preheat oven to 400 deg. F. Prepare a baking sheet with sides by lining it with parchment paper. Wash and coarsely cut up 3 lbs. potatoes (we like to mix varieties and colors!). Mix together 1 TB dried rosemary, 2 tsp. sweet or smoked paprika, 1 TB onion power, 2 tsp. garlic powder, and 3/4 tsp. salt. Toss potatoes with 1 TB olive oil and 2 tsp. maple syrup, then with the dry spice mixture. Spread potatoes out evenly oven baking sheet. Roast 10-15 minutes, then turn over to allow for even browning, and roast another 10-15 minutes until browned on both sides and fork tender. Enjoy!
